Recipe: Salted Caramel Tiramisu Cups made with Odd Cookie

Salted Caramel Tiramisu Cups made with Odd Cookie aka my new snack crush. These crispy mini cookies are totally crushable by the handful (which I have been enjoying) and also super useful as a shortcut in other desserts… like tiramisu. With simple ingredients in the cookies and this recipe (no egg!), this is a non-traditional tiramisu made easy but super flavourful and restaurant-worthy with the salted caramel assist from the Odd Cookies. Plus, they’re made in Toronto and woman-founded.

Ingredients: Salted Caramel Odd Cookies, 225 g mascarpone (room temp), 1 ½ cup of heavy cream, ⅓ cup of granulated sugar, 1.5 teaspoons of vanilla extract, 2 shots of espresso, 1 tablespoon of ground Espresso powder, Caramel sauce, Sea salt

Makes: 4 tiramisu cups

Method:
1. For mascarpone filling, whip the whipping cream with sugar (by hand with a whisk or in a stand mixer) until you have stiff peaks, then add vanilla extract and mascarpone and slowly fold in.
2. Pour caramel sauce into a small ramekin, dip one half of an Odd Cookie in and sprinkle with sea salt. Set aside.
3. Pour espresso into a shallow dish and quickly dip both sides of Salted Caramel Odd Cookies when ready to assemble.
4. Assemble cups with dipped cookies on the bottom, then a layer of mascarpone filling, dipped cookies, more mascarpone, and a sprinkle of espresso powder on top with your half-dipped Odd Cookie.
