Spicy Chicken Taco Bowl

It’s time to share my first Recipe #Remix on ToFoodies.com! What is a Recipe Remix? It’s when you take a product or leftover meal and give it new life! I’d love to bring more recipes like these to life for you, since it’s very much part of what I do at home. If I have leftover meatballs from a great meal out, I am always turning it into a savoury bolognese for over pasta the next day! Second life is just how I roll.

Today, we’re turning a takeout taco 🔜 taco bowl! Read on for the recipe and let’s taco bout how to turn small leftover into meals. 🌮🌮🌮 With precisely one spicy chicken taco leftover from Grand Electric in Parkdale, I had the idea to turn my fave leftovers a full lunch. With a little wild rice as the new base to a bowl, this quickly became a hearty lunch that you could easily recreate with similar leftovers.

Method
1) Fry soft taco shell in oil until it becomes a crispy tortilla chip.
2) Remove from frying pan and then add in the spicy chicken to warm it up.
3) To plate: fill a bowl with hot, cooked wild rice, then top with chicken, tortilla pieces (can be left whole or crumbled), wedges of lime and green + red hot sauce.
